Aspect: Pale gold in colour with fine and persistent bubbles.
The brioche and cooked-apple and cream character really comes through here. Full-bodied and round with fine bubbles. Flavorful and intense. Vivid, bread-dough finish. This is four years on lees. 55% Chardonnay and the rest Pinot.
A crisp Champagne, with a fine, lacy mousse and a pretty, finely meshed range of flavors, showing hints of crushed cherry, toasted almond, fleur de sel and pink grapefruit pith, followed by a smoke-tinged finish.
A fine bead in the glass, it shows warm, round fruit (ripe pear; apple), leading into a citrus laced finish of lime zest, citrus rind, and wet stone.
